I <3 SUNDAYS

For those of you celebrating, Happy Easter! I hope everyone is having a great morning so far and a great day planned! You know this is my day off from working out so I slept late…woot…and am working the Sunday morning crossword (my favorite thing to do!) and drinking coffee. You have to see my funny coffee cup! This was actually one of Keith’s 40 birthday gifts! haha…cute huh?

Okay I have solved the mystery as to why Sunday is my favorte day of the week. After some googling I found that I was actually born on a Sunday! That has to be it! Want to see what day of the week you were born on? Go here!

So last night I was all about cooking for my honey! He worked really hard yesterday on office work (I helped a little) that I wanted him to have an awesome Saturday night meal. So I made Tina’s low-fat chicken enchiladas! They were amazing! Thanks girl! I am posting her recipe below but if you go to her site she has step by step pictures!!

TINA’S LOW-FAT CHICKEN ENCHILADAS

  • 1 lb chicken breasts
  • 1/2 – 3/4 c low fat sourcream
  • 12 oz green enchilada sauce (1/2 the big can or 1 small can)
  • 1 small can 98% fat free cream of chicken soup
  • 1 small can diced green chilies
  • 1c shredded low fat mexican or cheddar cheese
  • 10-12 corn tortillas

Step 1: Cook & Shred 1 lb boneless, skinless chicken breasts

Step 2: Mix 1/2-3/4c low fat sour cream with chicken

Step 3: Mix the enchilada sauce, chilies, and chicken soup

Step 4: Pour 1/3 of sauce into bottom of a 9×13 baking dish

Step 5: Spoon chicken mixture into center of corn tortilla

Step 6: Roll tortilla and place seamside down into pan

Step 7: Pour remaining sauce over and top with shredded cheese

Step 8: Bake at 350 for 20-25 minutes until cheese melts

Step 9: Enjoy!

**The only thing I did differently was I heated up some chicken broth on the stove and dipped the corn tortillas in prior to filling them up so they would roll easier without tearing.

YUM!

  1. I want to start trying out more blogger recipes and showing it on my blog. I always feel like I canot write or show certain things and I am tired of it. I want to loosen up and do what I would like without fearing judgment or assumption from others.

  5. P.S: Trying blogger recipes are the only way I know how to cook now!! HAHA. I actually tried Whit’s pancakes (first time MAKING pancakes) and I haven’t looked back.

    I like trying blogger recipes. I often forget about them though and rely on sites like allrecipes more often. Really just because it’s easier to search. I should start bookmarking blogger recipes because there are definitely some mouth watering ones.

  12. I would love to try blogger recipes but unfortunately only a few bloggers I follow actually post the calorie/nutrition facts along with the recipes. I’m a calorie counter so I rarely just “wing it” with recipes.

    • I post the NI on most of mine…go to my HOW I EAT page for all my recipes and 95% of them have the nutritional information posted!!

    I was born on a Saturday, I’ve always known that because I was born a Saturday before Easter 🙂 and my parents tell me how there were processions going right by the hospital and my parents could hear them all. They were cheering for me 🙂
