Menu Debut

Many of you know that for the last several months I have been working with a local restaurant in Austin, Fion, to design a healthy lifestyle menu. Each entrée contains less than 700 calories and is being offered as a part of their new program to show people that healthy eating can taste good and not be a sacrifice! AMEN! So without further ado..it debuts TONIGHT! We are having a private tasting party and then tomorrow it officially hits the market. I am so excited! I will have pictures tomorrow! But do you want to see the menu? Okay…here it is….mine and Chef Paul’s blood sweat and tears for the last few months:

  •  Grilled flank steak with roasted tomato vinaigrette, walnuts and fresh blueberries over a parsley mescaline salad mix
  • Grilled chicken wrap with tomatillo salsa
  • Pan seared salmon with Israeli couscous and chopped parsley with lemon vinaigrette grilled asparagus
  • Skillet seared tenderloin on a bed of Mediterranean grilled vegetables
  • Tuscan style lamb bolognaise with red and white kidney beans
  • Pan seared tilapia on a bed of Israeli couscous and sautéed spinach with apple rhubarb chutney
  • Turkey meatloaf with pan Asian BBQ sauce with sweet potato mash wilted spinach
  • Whole wheat summer squash pizza

What would you order first?

I have obviously tasted everything and my personal favorite is the pan seared tilapia on a bed of Israeli couscous and sautéed spinach with apple rhubarb chutney! OH YUM! Tonight is going to be F-U-N!

  1. wow, that’s amazing! i would totally order the Turkey meatloaf with pan Asian BBQ sauce with sweet potato mash wilted spinach. i miss meat soooooo much! next time i’m in texas i’ll have to head to austin and try it!

  7. What an awesome sounding menu! I would go with the Grilled flank steak with roasted tomato vinaigrette, walnuts and fresh blueberries over a parsley mescaline salad mix first. I love the sound of walnuts and blueberries with steak…so unique!

  8. congrats…how can i get a job like that? wish i had did nutrition in school – was on that route and then made the biggest schooling mistake ever –life would be so different today!

    anyway, great menu…i would order them all..and eat them all.

    I’d go for the salmon- hands down. It’s always one of my most popular choices when I’m out to eat. And the fact that it comes with asparagus- oh my word…

  13. This is great news Kelly! So proud of what you are doing! It’s sooo important to get restaurants to serve tasty and helthy food! Everything sounds yummu…But it would either be the fisrt one (I can’t resist blueberries) or the tenderloin (love mediterranean cooking). Btw my husband is a chef and he cooks tasty, healthy food also 🙂

    I am really down now, I saw a specialist and all exercise is out of the picture for the next two months so that my spinal disc herniation would cure 😦

    • Oh honey…I am so sorry! I am super glad you got it check out though. No exercise at all…no swimming or anything?

      • Thanks 🙂 I know how horrible it’s not to be able to work out… I will try running in the water (I don’t know if I explain myself well :)) and lot’s of long walks and some biking.

      • Well hang in there…have you ever heard of an aquajogger? It is a belt that you wear in the pool and it stabilizes you so you can run in place…it is pretty cool!

    Depending on the situation, Pizza if I’m in party mode and the Grilled Flank Steak if I’m in a more fancy mood 🙂
    I usually don’t go for salads but oh my does that flank steak one sound good!

    • Fion’s approached the gym where I am the Nutrition Manager out of and asked if they would be interested. So it really just fell into my lap and I am SO thankful!!

  26. Kelly the menu looks great, the salmon/aspargus would be my choice if i was not vegan!

    And your hubs being jewish, so is mine! He is not practicing, at all, but was raised Jewish. We are raising Skylar as a good, kind, soul. No formal religion 🙂

    they sound delish but i would probably order the squash pizza but i am a bit of a rhubarb dork so i’d totally be “that girl” and request and for that spinach with the chutney as a side 🙂

    That’s so awesome you’ve been working with that restaurant to incorporate healthy items on the menu! They all sounds fabulous and healthy!
