I FINALLY Tried It!

Okay I have finally made April’s Low Carb Sweet Bread. I know I am probably the last blogger on the planet to take the plunge but…hey better late than never right? I made a few modifications though…here is what I did:

  • 1 cup egg substitute
  • 1/2 cup hot water
  • 1 tbsp baking powder
  • 1 tbsp cinnamon
  • 2 tsp liquid Stevia
  • 1/2 cup flaxseed
  • 1 1/2 cup wheat bran

Mix all ingredients together and bake at 375 for 30 minutes (or until toothpick comes out clean).

Serves 8:

My recipe (per slice): 72 calories; 2.7g Fat; 10.4g Carbohydrate; 0.3g Sugar; 7.1g Fiber; 6.2g Protein

Tasty!!

It was really good…and I definitely am excited to experiment with different flavors and add-ins. I have tons of ideas from all you people out there who are already making it and putting your own stamp on it! 🙂 Thanks everyone and of course, the fabulous April!! Keith has already had 3 peices…looks like I will making it again sooner than later! 🙂

  2. I haven’t made it, you’re not the last!! It does look so good!! Do you think I could use oat bran instead of wheat bran?? Not sure what the difference it, but maybe it could work?

    Mmmm…bread. I’ve got one more low carb day and then Thursday i’m eating a sandwich with 2 slices of ezekiel! Yes, it doesn’t take much to make me happy.

  12. Looks good… It’s it a strong cinnamon bread? Would raisins be nice in it I wonder?

    • No it isn’t strong cinnamon flavored at all. I was actually thinking of adding more cinnamon next time. I think raisins in it would be AWESOME!

  15. Never heard of it. But it looks like bread – and that goes for me in my book :)…yeah I bet you raisins and cinnamon would be awesome…with a bit of syrup…and anything slathered in a nut butter wins 🙂

    and the last post re snoring, Scott is a HORRIBLE snorer. As in i kick him into the guest bed b/c I cannot take it. I dont get any sleep some nights other wise. It’s horrible. And when he’s snoring really badly, he’s not getting restful sleep either, no one “rests” when they are being that loud!

  25. That looks good, I think I would add more cinnamon also, I tend to pour it by bulk into my coffee, so why not bread.
