A Fake-Out Wednesday

Happy Wednesday everyone! I am actually really liking this Wednesday because since I had Monday off it feels like a Tuesday! haha…take that Wednesday! I woke up feeling refreshed today…and followed my marathon schedule by doing 6 miles (8:35/pace) followed by 20 minutes on the elliptical. I just couldn’t help myself. The elliptical was calling me…Kelly…Kelly…you know you want to! I am so weak! haha! 🙂

Dinner last night was T-A-S-T-Y and simple!!! Confession: I am on a sandwich kick guys! It is a summer thing I guess. But seriously summer time says SANDWICH! Last night I did roasted red pepper hummus with sliced cucumbers on gluten-free Udi’s bread! I had that with some pear slices and I was in sandwich heaven…yet again! 🙂

Is that the perfect third grade lunch of what?!

  5. I actually saw Melinda’s blog post and responded to it – first-timer right here! My summers are filled with salads and fruit, but you know I love my grilled veggies!

  6. I’m on a sandwich kick, too. Last night it was crusty bread with goat cheese, grated carrots and radishes, sauteed zucchini, cucumbers and some balsamic. They’re totally summery, which I think is OK. Using the oven seems wrong when it’s 100 out!

  10. Why is it that sandwiches are so “summer-y”? Maybe because they’re an easy picnic thing? hmmm…

    For me, my summer dishes usually start being overloaded with fresh veggies and the carbs like pasta start to get a little ignored….

  11. Nicely done on the run. I hear you – sometimes when you’re really into the workout, it’s hard to stop. I think sandwiches are perfect for super hot summer days.

  12. Never miss a beat do you:) Not that I don’t adore hummus, I mean that’s one food that can get in my face, but the Examiner article – that’s terrific! Appreciating your body is the best advice, even when we are injured there are people out there that can’t get out at all.

  13. The summer food that screams to me are salads, fresh corn on the cob and watermelon. I just can’t help but to eat tons of it!

    anyway i love your sandwich. if it was warm here i would be eating grilled foods and watermelon. unfortunately it is pasta i crave because of this stinkin cold gloom

  22. Home-grown sliced tomatoes with a little salt and pepper SCREAM summer to me…probably because you can really only eat them during the summer, haha!

  24. YES! That’s the perfect third grade lunch… I should know because I am going into my 7th year of teaching third grade! Actually my kiddos probably wouldn’t eat it unfortunately— they’d probably choose a “lunchables” instead, gross!, but I’d eat your sandwich for sure!
    Thanks for posting on my blog… my knee is feeling better, not perfect, but I just need to strengthen it back up now… I actually ran today for the first time since may!… 4 miles, woo hoo!! Any ideas for strengthening a knee would be greatly appreciated… I was thinking of doing some leg presses just to strengthen around it if that makes sense?

    • Have you seen a doctor? Because for me the knee pain was a result of a musclar imbalance between my quadriceps and my hamstrings. Since both of those muscles connect at the base of the knee cap it was causing a pull on my knee. It totally amazes me how one muscles can directly affect a competely different body part. So for me I trying to strengthen my hamstrings in order to correct such a strong imbalance!

      • Thanks for the tip… no I didn’t go to a doc, I went to one last year with a hamstring injury though, so it’s very possible that could be effecting my knee too. The fact that I ran today though I think is a good thing, I am going to see how it goes, then take it from there. If there is any pain/ soreness in a week, then a doctor maybe in order!

  25. That sandwich DOES look good! I’ve been eating hummus and carrots like crazy this summer. Not sure why. I guess anything that ups my veggie intake is a good thing 🙂 And yeah, unfortunately, the froyo calls my name a little louder during this time of year, too!

  26. Hahahaa. The ellipitical was calling you? You’re so crazy! But me too sometimes! I did a set of hill sprints that nearly knocked me out day before yesterday because the hill was calling to me too. It knew I had more energy to burn! 🙂

    And I’m really not sure any food calls to me more in the summer than in the winter. I live in FLA so are winters are pretty sad so that could be why!
