Stuff Me Thursday

Happy Thursday everyone! I swear this week is going by at the speed of light. I mean no complaints but goodness I can’t believe it is already Thursday! This morning has started out nicely. Today is a no run day so I did 60 minutes of the elliptical (7 miles) and the followed that up with the following:

  • Prone Jackknife On the stability ball (12 reps)
  • Stability Ball Wood Chop (12 reps)
  • REPEAT ABOVE TWICE
  • Single Leg Romanian Dead-Life (12 each side)
  • Standing Alternating Overhead Press (12 each arm)
  • REPEAT ABOVE TWICE
  • Lunge with Front Foot Elevated (12 each leg)
  • Three-Point Dumbbell Row (12 each arm)
  • REPEAT ABOVE TWICE
  • Stability Ball Leg Curl (12 reps)
  • Push-Ups (8 man push-ups)
  • REPEAT ABOVE TWICE

Now I am sweaty and coffee bound!! Oh and a shower is definitely calling my name! 🙂

Unfortunately, my husband has a little tummy flu and was down for the count yesterday and last night. I am telling you…first he was craving ahi tuna with french fries and now he is sick to his stomach? Yup…Keith is definitely pregnant! So I was on my own for dinner. Usually that means one of two things: breakfast or vegetarian. The hubs is completely against both as proper dinner options. To which he gets a big eye roll from me! 😉 So I made a new creation…I did a little of this and a little of that and I present you with my vegetarian stuffed peppers:

KELLY’S VEGETARIAN STUFFED PEPPERS

  • 2 large bell peppers, any color (I used orange)
  • 1/2 T. olive oil
  • 1/2 clove garlic, minced
  • 1 cup mushrooms
  • 1/2 tsp. basil
  • 1/2 tsp. oregano
  • 1/2 cup peas, frozen
  • 1/4 cup walnuts, finely chopped
  • 3/4 cup couscous, cooked
  • 1/2 cup tomato sauce

Preheat oven to 375 degrees F.  Slice the tops off the peppers and then slice in half lengthwise; remove seeds, wash and pat dry. Place pepper halves in a small baking dish sprayed lightly with nonstick spray and roast for 15 minutes.

Meanwhile, saute mushrooms, garlic, peas, basil and oregano in olive oil until mushrooms are tender. Cook couscous. Once couscous is cooked, fluff with a fork and add walnuts and tomato sauce. Stir in mushroom mixture. Set aside and keep hot.

Remove peppers from oven and spoon mixture in to pepper halves and dinner is done! This was really good guys and the walnuts added such a good crunch and texture! I definitely recommend!

  2. I’ve been on a real pepper kick as of late- I should probably take advantage of this and do some sort of stuffed pepper dinner…

    I’m sooooo not adventurous with my hair. If they trim it more than I like I start to get nervous… lol

  3. My favorite vegetarian meal is a giant salad. Not so creative in the whole vegetarian department, I guess.

    And I’m so not adventurous with my hair. I get highlights but other than that it’s trims for me.

  4. I am actually getting my hair done today! I am adventurous but I think it’s because I’ve been with my stylist for 22 years. I’ve let him cut off 14 inches before and usually let him do whatever he wants – color and all!

  6. Dang, you go all out when you cook for just yourself. I would have gone super simple with a salad. Honestly, that is my favorite meal. Huge salad with hummus and fresh veggies.

    I am pretty adventurous when it comes to my hair. I have it long now, but I like it chin length too. It’s hair and it will grow back. I am starting to get the itch to cut it off again!

    • Usually I don’t go all out when it is just me. But Keith HATES vegetarian meals AND he hates stuffed peppers…so I had a window of opportunity!

  8. I love stuffed peppers. I think my favorite vegetarian meal is probably stir-fry. It’s so easy to throw together.

  9. Love vegetarian dinners! I usually enjoy Mexican inspired veggie options…lots of black beans!

    I love changing up my hair! Visits to the salon are always an adventure…how ’bout that blond, Kelly? I’m sure you will look glam no matter what!

  10. Girl, you’re gangsta! Sounds like you had a good workout, even though you couldn’t run! My fave veg meal? Hmm…probably just a yummy plate of veggies: asparagus, zucchini, tomatoes—with a healthy drizzle of EVOO, of course!

  11. Nice workout. Since I’m vegetarian, it’s hard for me to say I have a fave 😉 I am definitely adventurous about hair. I grew up with it super long and once I finally got the nerve to cut it off, I felt sooooo free. I’ve even gone as short as a pixie cut.

  12. Those bell peppers look great! I think I’ve made a variation with quinoa before…

    I make a fantastic vegan stirfry – I just throw some tempeh and whatever veggies are around the house, with cilantro, basil and this really spicy chile garlic sauce. You don’t even miss the meat!

    As for my hair. Atlanta humidity is the best/worst hairstylist I’ve ever known.

  17. i’ve had the same haircut for like 2 years..i can’t stop. i love it though! it used to be much shorter and more angled/stacked in the back, but i’ve grown it out a bit so i can put it up at the gym.

    Those stuffed peppers sound awesome! I usually stuff tomatoes, but its the same idea. So good!

    I am adventurous with my hair color. That’s about it. I can be brave and tell my hairdresser to cut it however he likes, but that’s more trust than anything else.

  20. I hope Keith gets to feeling better! The flu is the worst! I am VERY adventurous with my hair. I have done everything and anything to it and I usually sit down in the chair and say “do something killer” and we go from there. My only requirement is that the front needs to be long enough for me to get it out of my face, even if it’s just with clips because I hate having my hair in my face when I run!

    and i am almost too adventurous when it comes to my hair…i accidentally dyed it pink 2 weeks before meeting my husband’s family for the first time. OOPS 🙂

  23. I just wrote down your workout. I am loving everyone posting about what they do, because I need variety, and sometimes I’m too lazy to make something up myself. I did the one Hilary posted on Monday and it was pretty killer. I’ll try yours tomorrow!

    I am not at all adventurous with my hair, but I’ve been thinking of dying it lately. I’ve never done tat before, and I am feeling like I need a change of pace…something subtle maybe, but then I think why not go all out if I’m gonna do it? Post photos!

  26. I used to be so daring when it came to my hair! I cut it in all kinds of styles and dyed it all different colors. Since college is over I’ve stuck with one style and let it be its natural color. Got to be proffessional :).

    Oh and lastnught as I was plating dinner with pasta and veggies, jensen asked what the meat part of dinner was. It’s a given for him, too. Meatless is not on hi radar :). Luckily I know this and quickly showed him the shrimp that was just finishing up

  34. Favorite veggie meal would be Emily’s burgers I just made tonight. OMG!!!! Have you had them yet???? I am pretty adventerous with my hair color because with all my curls, my cut is generally the same (although it can be long or short).

    And, your peace sign photo made my day. Okay, the burger REALLY made my day, but this picture helped 😉
