Happy Mother’s Day!!

Happy Mother’s Day!!! If you are a mom out there…then celebrate this day dedicated to YOU!!! We did our Mother’s Day celebration yesterday at my mom’s house! It was so much!! First the salad recipe I promised yesterday! This is what I brought over (courtesy of Cooking Light):


  • 1 cup cooked brown rice
  • 1 cup fresh corn kernels
  • 1 cup coarsely chopped zucchini
  • 1 cup grated carrot
  • ½ cup diced plum tomato
  • 1/3 cup diced red bell pepper
  • ¼ cup chopped green onions
  • 2 tablespoons diced red onion
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon fresh lime juice
  • 1 tablespoon grapeseed oil
  • ½ teaspoon salt
  • ½ teaspoon chili powder
  • ¼ teaspoon fresh ground pepper
  • 1 (15 ounce) can black beans, rinsed and drained

Combine all ingredients in a large bowl, stirring well to combine. Cover and chill at least 1 hour before serving.

Yields: 6 (1 cup) servings

CALORIES 122; FAT 3.1g (0.3g saturated fat); CARBOHYDRATE 22.7g; SODIUM 359mg; PROTEIN 4.1g; FIBER 4.5g

  10. I can vouch for that salad being amazing! Its great with burgers or on a bed of greens. I think it says 6 servings, but I eat at least twice that for a meal!

  11. Now that is a salad…not just soggy lettuce leaves -blah!!
    You just need to add some cheese 😉 – then again I would probably drown it in cheese…

    • My stepdad grilled! We had Bison burgers and Salmon burgers! I had a salmon burger and it was fantastic and Keith had the bison…which he loved too! It was YUM!!
