Thursday Smiles

YAY! We made it past Wednesday! Now I feel like the week is officially on the decline! ๐Ÿ™‚ Sweet! Workout this morning was great. I did a speedy 5 miles at 7:30 pace (8.0) followed by 45 minutes on the elliptical. Once again…happy workout = happy Kelly!!

Dinner last night was another new invention!! I am getting creative these days! haha! I wanted stuffed chicken breasts…so I…um…STUFFED EM!

FETA STUFFED CHICKEN BREASTS

  • 1/3 cup crumbled feta, sun-dried tomato flavor
  • 1 Tbsp. olive oil
  • 1/2 cup chopped red onion
  • 1 Tbsp. capers
  • 1/4 cup basil leaves, chopped
  • 4 (4 oz.) boneless skinless chicken breasts

Heat oil in a nonstick skillet over medium-high heat. Add onion, stirring, 3-4 minutes until soft.

Remove skillet from heatย and transfer onions to a small bowl. Stir in the basil, feta and capers.

Cut a horizontal slit in chicken to form a pocket. Stuff 1/4 of the cheese mixture into each chicken breast.

Return skillet to medium-high heat and add a tad more olive oil.

Add chicken and saute for 6 minutes. Carefully flip chicken over and cook for another 6 minutes or until chicken is cooked through.

What do you think? I know it sure tasted good! ๐Ÿ™‚

PSST…Have you check out my How I SHOP tab? I recently added some new products that might be of interest!

Yesterday I was going through some old papers and cleaning up my desk and I found a sticky noteย where I had written down the following:Trying to be perfect actually hinders your chances of being excellent.” I LOVE that quote and it is something I need to remind myself of daily. I struggle with trying to be perfect that I sometimes fail to see that Iย can beย excellent! I want to be the perfect runner, the perfect wife, the perfect cook, and the list goes on. But I can’t be perfect because perfection is impossible! I need to throw out the perfection scale and focus more on being simply the best I can be (flaws in all) and recognize the excellence in that! A daily struggle…but quotes like this help me remember!

Do you think the above quote is true?

  1. Feta stuffed?? OMG that sounds incredible! Yum!

Hmmm I do think that quote is true, because being perfect is subjective. No one or no thing is perfect.

  2. I like that quote! Perfectionism isn’t something that I’ve struggled with really…although I have plenty of other struggles on my plate! Still, I like that quote because it’s so right– if you’re too caught up striving for something that isn’t achievable, you miss out on all of the (non-perfect) great things going on around you!

    Yummy taters ๐Ÿ™‚

  3. Looks good. I used to buy these spinach and provolone stuffed chicken breasts — have to look for those again I think.

  4. TGIT to you lovely lady! Still trying to figure out why you hate Wednesdays so much LOL ๐Ÿ˜‰ That’s a freaking awesome pace for 5 miles. I’m tired thinking about it!! Good job. I do agree with that quote. I am a perfectionist to the nth degree and I spend so much energy trying to be perfect, that I forget to just be excellent – to just let myself be great. And I think you can be excellent, you can be great, without being perfect.

  5. That chicken looks delicious!

    Love the quote, so true.

  6. Chicken and feta is always a good combo in my mind!

    Love the quote too.

  7. As a perfectionist Type A person that is so true! Often when I think I am going to fail to be perfect, I just give up fighting and move on to something else. I think this has caused me to miss multiple opportunities I should have taken.

  8. That sounds delicious. I particularly like the addition of capers…I love those. My problem is that I freeze all of our chicken breast ahead of time and never remember to defrost it before eating. So stuffing it is usually not an option. I’ll have to remember this for next time I buy a new batch.

  9. Hi everyone!

It’s Andrew from OpenSky, stopping by for a quick hello, and to let you all know that we’re working very hard with Kelly to find the most UNIQUE & INTERESTING brands/products to feature in her Shop.

We would LOVE to have your input! Is there a specific Fitness Brand or Product we’re missing? How about something for the Kitchen that you just can’t live without?

Thanks for the suggestions & Happy Shopping!

  10. Mmmmm feta is so so good!!!

That quote is so true! Striving for perfectionism has you focused on perfectionism and not totally on what it is that your really trying to achieve….. I don’t know if that makes sense but that’s what I thought of when I read that quote.

    Happy Thursday Kelly!!

  11. Mmm love feta stuffed chicken breasts, really what isn’t feta good with?

Love the quote. I think trying to achieve perfection can be really unproductive. I feel that if I give it my all and I am doing my best that is when I do my best work.

  12. I want to have a bite out of those potatoes and chicken. Oh my goodness. I think its because I had a lame breakfast and my stomach wants something….GOOD!

  13. That quote is great! I think it’s important to have high standards for yourself and what you want to do, but constantly striving for perfection is taxing- and sometimes not the best way to go about things…

  14. The harder you try to be perfect, the loftier the expectations become! It actually kind of reminds me of the quote that I have on my necklace, which says “the more joy you have, the nearer perfect you are.”

  15. Can we just say…YUM! That chicken looks fantastic!

& I think the quote is great…always trying to be perfect takes away from the experience…sometimes if you’re too focused on what other people believe are perfect you lose sight of your original goal.

  16. agreed! striving for perfection is a tricky slope to be on–bc you will never reach it and always be leaving yourself dissapointed! I think you should just strive to do your best…whatever YOUR best is.

  17. Ok that chicken looks amazing! Feta goes so well with chicken!

I love that quote. I completely agree. I’ve always told myself to do my best and never aim for perfection because there’s no such thing.

  18. The inside of that chicken looks divine!!! Nice work Kelly ๐Ÿ™‚

  19. That chicken looks delicious minus the capers ๐Ÿ˜‰

  20. love the quote, kelly! it’s so true… rather than trying to be PERFECT, we should strive to be the best version of ourself. i find that sometimes i define perfection by looking at others… i’m never going to have jessica alba’s body – and that’s okay.

  21. OK that chicken seriously looks amazing!
And that quote…..SO true! The more I try to be perfect the less likely it’s going to happen and then you realize that NOBODY is perfect. It’s hard though because it’s easy to view other people or their lives in regards to perfection and we forget sometimes that it’s not always as it seems and they may be looking at someone else in the same light….if that makes sense!

  22. i definitely believe that quote is true! there’s no way to be perfect…and the trying just makes you crazy!

  23. I have made something similar to that before. Very delish!

And what a great quote. That is a wonderful perspective to have and one I know I could work on adopting more whole heartedly.

  24. I’ve never stuffed anything either, I need to try this! ๐Ÿ™‚ I love your creative recipes!

I have never been a perfectionist…and sometimes NOT being one hinders me, I can be too laid back and not try to my fullest potential…

  25. Hiiii Beautiful!!
Loveee you and your happy workout…definitely sets the tone for a happy day! ๐Ÿ™‚
I think the word perfect is sooo blah compared to EXCELLENT!! Great quote! be excellent today gorgeous girlie! ๐Ÿ˜‰
    ~xoxo!

  26. Oh my gosh I just loooove the looks of that chicken! I adore stuffed food and especially anything with feta! I think you’ve made the perfect meal!

I love that quote too- it’s so helpful to remember that all of our efforts and achievements are beautiful regardless of those standards we hold. What’s important is that we try to be happy. I agree with you 100%!

  27. I love all about this post! First – holy crap workout! God you amaze.
Second – Feta? Chicken? Potatoes? LOVE IT! I Love it. So going to have to do this up…I have been guilty of buying pre-cooked stuffed chicken…:0…it’s true…and that quote – well, I believe it. I’m far from perfect anyhow and gave up a while ago…

  28. I love that quote too! I almost want to stick it on my wall ๐Ÿ™‚

  29. I love stuffed chicken breasts! With anything! Yum! Love that quote also.

  30. Great stuffed chicken!! You are so creative. No one is perfect – at times we expect too much of ourselves. Just be you – the person we all love!!

  31. Feta stuffed chicken, so creative !!! Kelly it looks soo good.

I really like that quote and I think it is very true. If we focus on being perfect, which is unattainable, we waste time and energy focusing on fixing our flaws instead of focusing of what makes each one of us great!

  32. MMM STUFFED CHICKEN! my fav!! soo good! i love that quote-soo true. we gota focus on our blessings NOW!

  33. I am oh SO impressed with that stuffed chicken. It looks really complicated.

I have never even THOUGHT about the message of that quote. I am a text-book perfectionist, so that is really hard for me to accept, but how true! I am going to write that down. ๐Ÿ™‚

  34. i LOVE stuffed chicken breasts! I have two recipes on my blog too, but havent tried with feta!

    love the quote ๐Ÿ™‚

  35. So true, when I try to be perfect I get super stressed and everything comes crashing down!

  36. your dinner looks fab girl! love the quote-to me it rings true!

  37. I love that quote!!! I believe it is so true ๐Ÿ™‚ Good quotes are so motivating to me…i sign up and get them every day!

    Your dinner looks very yummy!!

    XXOO

  38. I think that may be one of the best quotes ever. The chicken looks divine!!

  39. I love the quote, it is so true! Perfection is impossible, but excellence? Definitely!

  40. I like that quote a lot. It sounds like me! I need to stop striving for perfection. Sigh! ๐Ÿ™‚

  41. You are a kitchen goddess and the object of every man’s cooking dream. Seriously. When you come to visit me, make me chicken?

  42. I’m cute? What?!

  43. I completely agree with the above quote! Feta in any kind of food wins my stomach over!
