Thursday Smiles

YAY! We made it past Wednesday! Now I feel like the week is officially on the decline! 🙂 Sweet! Workout this morning was great. I did a speedy 5 miles at 7:30 pace (8.0) followed by 45 minutes on the elliptical. Once again…happy workout = happy Kelly!!

Dinner last night was another new invention!! I am getting creative these days! haha! I wanted stuffed chicken breasts…so I…um…STUFFED EM!

FETA STUFFED CHICKEN BREASTS

  • 1/3 cup crumbled feta, sun-dried tomato flavor
  • 1 Tbsp. olive oil
  • 1/2 cup chopped red onion
  • 1 Tbsp. capers
  • 1/4 cup basil leaves, chopped
  • 4 (4 oz.) boneless skinless chicken breasts

Heat oil in a nonstick skillet over medium-high heat. Add onion, stirring, 3-4 minutes until soft.

Remove skillet from heat and transfer onions to a small bowl. Stir in the basil, feta and capers.

Cut a horizontal slit in chicken to form a pocket. Stuff 1/4 of the cheese mixture into each chicken breast.

Return skillet to medium-high heat and add a tad more olive oil.

Add chicken and saute for 6 minutes. Carefully flip chicken over and cook for another 6 minutes or until chicken is cooked through.

What do you think? I know it sure tasted good! 🙂

Yesterday I was going through some old papers and cleaning up my desk and I found a sticky note where I had written down the following:Trying to be perfect actually hinders your chances of being excellent.” I LOVE that quote and it is something I need to remind myself of daily. I struggle with trying to be perfect that I sometimes fail to see that I can be excellent! I want to be the perfect runner, the perfect wife, the perfect cook, and the list goes on. But I can’t be perfect because perfection is impossible! I need to throw out the perfection scale and focus more on being simply the best I can be (flaws in all) and recognize the excellence in that! A daily struggle…but quotes like this help me remember!

Do you think the above quote is true?

    Hmmm I do think that quote is true, because being perfect is subjective. No one or no thing is perfect.

  2. I like that quote! Perfectionism isn’t something that I’ve struggled with really…although I have plenty of other struggles on my plate! Still, I like that quote because it’s so right– if you’re too caught up striving for something that isn’t achievable, you miss out on all of the (non-perfect) great things going on around you!

I do agree with that quote. I am a perfectionist to the nth degree and I spend so much energy trying to be perfect, that I forget to just be excellent – to just let myself be great. And I think you can be excellent, you can be great, without being perfect.

  7. As a perfectionist Type A person that is so true! Often when I think I am going to fail to be perfect, I just give up fighting and move on to something else. I think this has caused me to miss multiple opportunities I should have taken.

  8. That sounds delicious. I particularly like the addition of capers…I love those. My problem is that I freeze all of our chicken breast ahead of time and never remember to defrost it before eating. So stuffing it is usually not an option. I’ll have to remember this for next time I buy a new batch.

    That quote is so true! Striving for perfectionism has you focused on perfectionism and not totally on what it is that your really trying to achieve….. I don’t know if that makes sense but that’s what I thought of when I read that quote.

    Love the quote. I think trying to achieve perfection can be really unproductive. I feel that if I give it my all and I am doing my best that is when I do my best work.

  13. That quote is great! I think it’s important to have high standards for yourself and what you want to do, but constantly striving for perfection is taxing- and sometimes not the best way to go about things…

    & I think the quote is great…always trying to be perfect takes away from the experience…sometimes if you’re too focused on what other people believe are perfect you lose sight of your original goal.

  16. agreed! striving for perfection is a tricky slope to be on–bc you will never reach it and always be leaving yourself dissapointed! I think you should just strive to do your best…whatever YOUR best is.

  20. love the quote, kelly! it’s so true… rather than trying to be PERFECT, we should strive to be the best version of ourself. i find that sometimes i define perfection by looking at others… i’m never going to have jessica alba’s body – and that’s okay.

    And that quote…..SO true! The more I try to be perfect the less likely it’s going to happen and then you realize that NOBODY is perfect. It’s hard though because it’s easy to view other people or their lives in regards to perfection and we forget sometimes that it’s not always as it seems and they may be looking at someone else in the same light….if that makes sense!

    I really like that quote and I think it is very true. If we focus on being perfect, which is unattainable, we waste time and energy focusing on fixing our flaws instead of focusing of what makes each one of us great!
