Hey guys…it is Wednesday! I don’t know why I hate Wednesdays so much but it is like as soon as I open my eyes I am hit with this annoying…”UGH It’s Wednesday” feeling! What is wrong with me?? How can I be so chipper on Mondays and then be such a Wednesday hater?! Any suggestions to convert me to a Wednesday lover would be GREATLY appreciated! 🙂
So even though it is Wednesday I did manage one awesome workout. Guys I am not going to lie…that workout yesterday kicked my butt! I was hurting like no other today. So as a recovery I did a chill 10 miles at 8:35 pace. I needed a slower long run to work out the lactic acid build up. Whenever you are REALLY sore the best thing you can do is MOVE…and move I did. 🙂
Dinner last night was a new creation that I did based upon several recipes I have seen for pizza casseroles. My protein craving hubby was craving some “man food” and so this definitely fit the bill. Plus I love casseroles because you can assemble them advance and then just pop them in the oven when you are ready to cook. Since Tuesdays tend to be busy for me, that is exactly what I did. I put this together in the morning and then it was easy to just pop in the oven that night! (Jessica…I feel like this recipe would do you proud! haha)
PIZZA CASSEROLE
- 1 lb. lean ground beef
- 1 medium onion, diced
- 2 garlic cloves, minced
- 1 (8oz) package of mushrooms, sliced
- 1 (4oz) can sliced black olives, drained
- 1 (15oz) jar pizza sauce
- 5 oz. turkey pepperoni slices, cut in half
- 3-4 oz. low-fat mozzarella cheese, shredded
- 2 cups cooked pasta (I used gluten-free macaroni noodles)
Preheat oven 400 degrees F.
Brown beef, onion, garlic over medium high heat. Drain off excess grease. Add mushrooms, olives, pepperoni and pizza sauce. Cook until heated through. Mix in pasta.
Pour into a baking dish sprayed lightly with nonstick spray. Sprinkle with cheese.
Bake for 20-30 minutes until cheese is melted and bubbly.
Serves: 6
357 Calories; 13.3g Fat (4.3g saturated fat); 72.9mg Cholesterol; 658mg Sodium; 29.4g Carbohydrates; 6.0g Fiber; 0.2g Sugar; 27.8g Protein

Wednesdays are when the food ads come out and then Criminal Minds is on. It’s actually possibly my favorite day of the week… XP
That casserole looks so filling haha. I don’t think I make man meals. It might not have helped that my dad hasn’t lived with anyone but a woman and two girls for a couple decades. He occasionally makes friends with a steak and cooks it on the grill, and that’s his man meal. 😉
That casserole looks fantastic, but like something I’d go crazy over rather than my husband! He’s currently demanding boeuf bourguignon. Heaven help me!
I can’t stand Tuesdays, so I feel you pain. Maybe make Wednesday as special breakfast or workout day? Sneak something in on Wednesdays that you REALLY love and can look forward to!
For my husband, a man meal is a cheesedog and fries, so I’m trying to wean him off of man meals and get him on something a bit healthier!

Hey Kelly– Ryan’s aunt is coming to visit us this weekend, and she eats a gluten-free diet. I was going to buy a few gluten-free baking mixes, and I remember you saying that you have a favorite (I think it was for brownies?)…mind sharing?!

No problem! Our favorite brownie brand (hands down) is Namaste! And the best pancake/waffle/baking mix is Pamela’s!

Isn’t it funny how moving is typically what’s best when you’re feeling it after a hard workout?! I made my version of a “man meal” last night. Lentil loaf, smashed cauliflower, citrus kale & apples. “meat” and “potatoes” LOL
I like a good burger from time to time, eveen though it doesn’t love me back!

This looks awesome! I am a huge fan of healthy casseroles because 1) they usually contain cheese and I love cheese and two they are so easy to make! I am saving this one.
Some people do “cookie Fridays” and I do “Tuesday Fundays” (usually)… you need something for the horrid hump day… I’m just not coming up with anything because you always have kick ass workouts and food! lol.
My go-to meal when I don’t feel like cooking is similar to a man meal, or an east coast dinner I suppose you could call it too. Meat’n’ potatoes. Mmmm some tasty.
We had pork chops, baked potatoes (in the microwave lol) and broccoli! Chows down on ‘er I does!
What a great casserole Kelly. I love how it is so healthy and it can still be considered “man food”. My boy would definitely love some of that, maybe I will surprise him and make it 🙂
I am not a fan of the days that don’t begin with S’s!! I try to look at wednesdays as one day closer to the S’s!!
That looks delicious, this meal is right up my alley. Yeah, I like man meals. Although I get tired of steak hoagies and hamburgers my Husband asks for all the time.
The pasta bake is a favorite here too! My men LOVE it! So easy and definitely manly!

I feel like that on Wednesdays sometimes too. It’s the middle of the week type thing. I love blogs because I get to read and discover creative recipes like this one. I would NEVER have thought to do something like this. Great idea!
Our biggest “man meal” round these parts is homemade mac and cheese!

Todd doesn’t like really heavy food…or cheese…his favorite ‘man meal’ is a med-rare steak topped with balasmic glazed red onions, a side of mashed canellini beans and a salad. 🙂

I’m making the shephards pie I have done before tonight for dinner (and your orange chicken tomorrow ;)). But anyways…the meat + potatoes is definitely a man dish for tonight. The hubs is excited after I made him eat lentil soup last night. LOL

I dont cook for my boyfriend, so I dont really make any man meals. The best he’s EVER gonna get out of me is chicken.
I am not a man meal eater but my husband sometimes eats sausages with potatos and we call that man meal 🙂
To you to like Wednesdays…We have a thing called Happy Wednesday. Since it’s the middle of week and we feel we need some cheering up, we have a little nicer dinner with vine and talk about something else than every day life. Sometimes it can be even a dinner out. This has helped us to like Wednesdays more 🙂

I’m kind of happy that you hate Wednesdays, actually. Your early-week pep was starting to make me think you weren’t human! I don’t mind Wednesdays because it’s closer to Thursday and by the time Thursday rolls around, it might as well be the weekend! My brain shuts off by then 🙂

Thanks for the tip yesterday on the last week before a race…I’ve been struggling a bit this week with knowing exactly what to do about nutrition/exercise. I did 4 miles today and it felt a little difficult and I’m not sure why! I just want Sunday to be here already haha! 🙂
