I Copied YOU!

3 posts in one day….WOW…what is going on?! I made Katie’s fabulous peanut butter cookies this afternoon and had to share! THANKS KATIE! The only thing I did differently was I did not add the carob or cocoa powder and just went straight up PB on your arse! (Oh and I sprinkled them with a little sugar for some extra sweetness! hehe!) Here’s Katie’s recipe:

Peanut Butter Carob Cookies (Makes 6 cookies)
  • 2 T peanut butter
  • 1/4 cup flour (I used Bob’s GF mix)
  • 1/4 cup Stevia Baking Blend (or equivalent sugar)
  • 1 T carob powder (or cocoa)
  • 1/8 t salt
  • 1/8 t baking powder
  • 1 egg white

I just threw everything in one bowl, willy-nilly. Shape into little balls and flatten with fork to get those cool old-fashioned fork marks that let you know that you are eating a peanut butter cookie. bake at 350 for 10-12 minutes. (I actually baked these in my toaster oven, since there were only 6 of them.)

You KNOW you want them!

  4. wow – they look great and an easy recipe – no fancy things needed. i like how chewy they are. i think i would go would adding chocolate chunks though. i am all about chocolate in my cookies 🙂

    • You would probably like the original recipe then! I am just not a huge fan of chocolate in my PB cookies for some reason. I just like them plain!!

  8. I haven’t made just pb cookies in so long…I have had just pb though like today when I dipped carrots right in the jar ! 🙂 I need to try these!

  19. Oh YUM! I love PB, love, love, love. I’ll have to try these this weekend…but probably not the same night that I do the pb chicken marinade! HA…Todd would go nuts…no pun intended.

  20. Oh my GOD I LOVE peanut butter cookies, shocking I know. You know what my favorite part is? How they’re squished down with a fork in the middle. That’s how you know it’s a PB Cookie. Your’s look fanfreakintastic!!
