First….CONGRATULATIONS to everyone who raced this weekend. I had so many people that I was mentally rooting for. It was frantically checking race websites and blogs getting updates all morning on Sunday! I was so proud of everyone and literally was jumping around waiting for results to be posted. I was getting text messages like crazy from people I was tracking! It was great and I wish I could have been there for you all but know I was totally there in spirit ROOTING YOU ON!! 🙂
Second, as promised I said I would post all the breakfast goodies I made yesterday for this Keith this week. So without further ado here we go:
Tropical Steel Cut Oats
- 1 cup steel cut oats
- 4 1/2 cups water
- 1/2 tsp. salt
- 2 tbsp butter
- 2 tbsp brown sugar
- 1 tsp coconut extract
- 1/2 cup dried fruit (I used a mix of pineapple, papaya and mango)
Spray the inside of a crockpot with nonstick spray. Mix all ingredients inside crockpot. Cover and cook on LOW for 4 hours.
Turkey Sausage Breakfast Casserole
- 1 pound lean ground turkey sausage
- 4 eggs, lightly beaten
- 4 green onion, finely chopped
- 1 (16oz) package frozen hashbrown potatoes (I used Cascadia Farms brand)
- 1/2 cup milk (I used 2 %)
- 1 1/2 cups shredded cheddar cheese
Brown sausage in skillet; drain. Stir together all ingredients in a BIG bowl and pour into a baking dish; sprayed with nonstick spray. Bake at 350 degrees for 60-65 minutes.
Ham and Cheese Breakfast Casserole
- 2 cups chopped ham
- 1 cup shredded cheddar cheese
- 5 eggs
- 1 cup baking mix (I used Pamela’s gluten-free pancake/baking mix)
- 2 cups milk
Place ham and cheese in bottom of greased pan. Mix remaining ingredients and pour over ham and cheese. Bake at 400 degrees for 45-50 minutes.
So there you go! Enjoy! These were all three SUPER easy and they made my house smell so good! I love breakfast smells. It is my favorite meal to eat out!

The casseroles are to die for – I eat cheese like I breathe…
I love eating out, but I want it all. Hmm – maybe dinner?

I like eating dinner out the most becuase it’s a great way to unwind and treat yourself after a long day. Plus, I’m no the best/most creative cook when it comes to dinner foods. I also like eating brunch out too…it’s the easiest way for me to eat healthfully when I’m out, yet I still feel very satisfied. I usually get an egg white omelette loaded with veggies and ham. For dinner, there are many more temptations. Hello bread basket and dessert menu!

Ha…I am the exact opposite! It is pretty much impossible for me to eat healthy for breakfast…pancakes oh my…LOVE THEM!

I enjoy eating out any meal- probably not a good thing! But I do really love finding little hole-in-the-wall spots and cafes for breakfast. It’s so much fun!
whoa bthat breakfast cassarole looks good!!! i tend to prefer my breakfasts more onthe ‘sweet’ side, and that cassarole would be a PERFECT dinner for me! I love eggs for dinner!
favorite meal to eat out would be dinner or lunch! I much prefer to make a yog mess or my famous oatmeal for my owb breakfast and untl i find a restaurant that has an oatmeal bar…ill take my own anyday 🙂
I love the idea for those oats—coconut and tropical fruits. YUM. As for eating out, I don’t really like to get breakfast out because it usually disappoints (and I can make most of it better at home). I most enjoy dinner out, though I’m trying to cut down on the eating out since it takes a big huge bite out of my budget.
I guess eating dinner out is the best because that is usually when everyone wants to get together. I love the oat idea too. Thanks!

Actually, dinner is nice to eat out too. I can whip up a nice breakfast myself but it’s harder to cook a really nice dinner for myself. So maybe dinner is better for eating out… plus, then you can get dessert 🙂 lol

My favorite meal to eat out is dinner. Mainly because I can make breakfasts and lunches that completely satisfy me, but dinners are tougher for me since I admit to not being the best cook.

The only meal I enjoy eating out is dinner. Portion sizes are HUGE and if I eat breakfast or lunch out, I’m stuffed for the rest of the day.

Breakfast is totally my favorite meal. Probably because of the eggs. I cant eat them often so theyre like a special treat for me!
I love the smell of breakfast too! My favorite meal!!! We hate eating out now since I can’t have dairy of soy and my husband can’t have wheat. The only place we really go to know is the burrito place and that is really just so the kids get the experience of eating out occasionally. Going to IHOP is so painful for the two of us! Your casseroles look delicious!
Favorite meal to eat out is Lunch, and the favorite to eat is breakfast. I think I could eat breakfast food for every meal though.
