Take 2 Tuesday

Good morning! How is everyone?! I am feeling pretty darn good…I rocked out 12 miles this morning at 8:20 pace and will be heading to Body Pump in a few hours. But first I suppose I should get a little work done, right?! Good thing I love my job and work doesn’t ever feel like “work.”  

Do you love your job, hate your job, or are generally just apathetic? 

But first, I am going to sit right here and eat my breakfast, drink my coffee, and blog with you for a few! Sounds perfect right?! I sure think so! 🙂 What do we want to talk about first? Dinner…you want to know about dinner? Let’s go with Pecan Crusted Tilapia shall we? SO GOOD! 

Yum Yum Yum

PECAN CRUSTED TILAPIA 

1/2 cup dry breadcrumbs (I used gluten-free) 
2 tablespoons finely chopped pecans
1/2 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon black pepper
1/2 cup low-fat buttermilk
1/2 teaspoon hot sauce
3 tablespoons flour
4 (6 ounce)  tilapia fillets
1 tablespoon oil, divided
lemon wedge 

Combine breadcrumbs, pecans, salt, garlic, and pepper in a shallow dish. 

Combine buttermilk and hot sauce (such as Tabasco) in a medium bowl. 

Place flour in a third dish. 

Dredge 1 fillet in flour, dip into buttermilk mixture, then into breadcrumb mixture. Repeat with remaining fillets. 

Heat 1 1/2 tsp oil in a large skillet (non-stick works best) over medium-high heat. 

Cook  fillets for 3 minutes on each side or until fish flakes easily. Serve with lemon! 

Serves: 4 

330 Calories; 12.4 g Fat (2.3g saturated fat); 86mg Cholesterol; 525mg Sodium; 16.9g Carbohydrates; 1.5g Fiber;     2.6g Sugar; 38.3g Protein 

SO…onto Sports! Is anyone else interested in March Madness? I am not usually a basketball follower but I gotta be honest I like March Madness and my conference (GO BIG 12…I am a Texas A&M Alumni) is kicking butt this year! Plus…Keith and I each fill out a bracket to try to beat the other one. I know, I know, first football and now this? What can I say we are competitive freaks! But you love us… 

Who is your pick to win March Madness this year?

  3. Oooh tilapia! Your job sounds so fun! I think everyone should work in a field they enjoy. I work in Human Resources and love it – always something new and different going on! I have not followed college bball what-so-ever this year. So…in that case GO KANSAS! 🙂 Have a good one!

    • I actually have my BBA in HR Management and worked in that field for about 4 years post college…and you are totally right you NEVER know what you are going to see. We had to reprimand a 40 year old man for writing on the bathroom stall something bad about his boss. I remember thinking…REALLY?!?! You’re 40 not 14!!

  4. That tilapia sounds great. I love pecan-crusted fish. As for the job, I like what I do, so I’d say that’s a good thing. Getting up in the morning to do it is another thing. I’m so not a morning person, so I’m not chipper about going to work like you are!

  6. I really wish I could say that I loved my job and that it didn’t feel like work. I don’t hate it, but I certainly don’t get super excited about getting up Mon-Fri either.

  8. Sadly, I’m entirely apathetic about my job. I would quit, but I recognize I’ve got a pretty decent situation – I work a regular 9-5 job that isn’t too stressful and pays the bills while allowing me to pursue activities I truly enjoy!

  10. I love my career of choice! I love being an RD.

    I think you know I just left my job… while I love being in RD… I wasn’t super happy with what I was doing with my RD. I 100% LOVE what I’m doing now!

    • You could easily do it with chicken…just pound it out really thin or you could always bake it and then broil it at the end to get it crispy!!

  12. I hate my job…hate it with a passion…and worse..i cannot even do it right!!
    But, I have to “put up and shut up”…i need to work at least another 10 years or so that just to support myself…then maybe i can slack-off and work a 0.8 position ….i can dream !
    i think to compensate i need to try to involve myself in social stuff and reading and movies or whatever…maybe some day meet an awesome guy who will sweep me off my feet…i said i could dream 🙂

  13. Do you do your morning runs on the treadmill or outside? I get so bored after a mile on the treadmill. How do you stay motivated to keep running while on the treadmill?

    • It depends…I am about 50/50 depending on what time I need to do my run. I HAVE to run first thing in the morning so a lot of time the weather, if it is dark and what time I have my first client will dictate what time I run. The longest run I have ever done on the treadmill is 15 miles. I honestly don’t mind the treadmill at all. I could probably run an entire marathon on a treadmill. When I run I TOTALLY zone out and it is like my yoga/meditation…so I don’t even think about it. But usually I will play my IPOD and jam out. I don’t know…everyone is different. But when I can get outside I totally do…running in the FRESH air always makes me happy! 🙂

  15. OOoooo delicious pecan-crusted tilapia!! I’m so in love with fish and pecans separately that I imagine combining the two would be heavenly.
    I do like my line of work so I consider myself lucky. But you take the cake for being the most positive and upbeat person! I would love to work with you- you’d make me happy all day long!

  17. My job is boring. plain and simple. A desk job that I am dying to change up. Im getting a BBA in Management & Operations with a focus on HR and I just want to get started in the field and not do boring work. But im stuck in a dilemma because if I move down to HR I get paid less than I do now without my degree. BOOOO!

    not into college basketball but I hear Kansas is a fave?!

  18. Right now my job is being a student. I love knowing that in the end I’ll be in a career that I’ll love but sometimes I get discouraged because I’m taking some not so fun courses. Chemistry is not my thing!! Have a great day!!!

    • Yes I have a boss….ME!! ha ha! I make my own hours and I set my own client rates…LOVE the freedom and love the job flexibility! I am just so thankful that I am able to make a living doing what I love in the economy we are in. 🙂

      • What is it exactly that you do in your job anyways Kelly? Do you meet with clients, coordinate stuff?? Haha – hey! a post idea – “A day in the life of Kelly – a Nutrition Manager”…:) !!!

  26. My job is OK. My boss is great, so that makes up for the things I dont like.
    I mean seriously, who just gives their employees concert/hockey tickets? Or digital picture frames? Or buys lunch ALL THE TIME.
    So no, I dont love my job. But Im not leaving!!

  27. Kelly, do you eat something before your morning run? I have difficulties with running after eating but can’t run more than 25min without eating.

    • I do. I usually eat either a half or an entire Powerbar (depending on how far I am running) about 30 minute prior. If your stomach is too sensitive for real food then I would suggest one of the following: experiment with Guu’s or gels…sometimes those are easier on the stomach then solid food. Or eat more carbohydrates at dinner (like double the amount you would normally eat) and see if that helps with an early morning run. Sometimes if I am out of powerbars I will do that…go heavy on my nightly carbs and that usually sustains an early morning run for me. Keep me posted!

  28. I don’t hate my job, but I’m ready to start working on my career in a field that I love. And that’s not happening at the moment. I check for new positions ALL the time and hope that something opens up soon.

  29. Hi Kelly! Quick question: If over the course of 8 days an individual loses 3 pounds but their thighs increase in circumference, does this indicate a loss of muscle and a gain of fat?

    • I would need more information…like how the weight was lost. If the 3 pounds were lost with a healthy diet and exercise then I would say no…you did not gain fat. But if the weight was lost in a “crash dieting way” (i.e. eating too little and dieting to an extreme) then I would say yes…it probably means muscle is being lost.

  30. The weight was lost over a 8 day beach vacation in which work outs were decreased from 6 days a week to 3 days a week and a few french fries and pieces of bread were eaten that aren’t typically part of the diet…woopsies 🙂

    • HAHA…glad you had some fun on vacation…that is most important!! Based on that, and without any real body fat calculations, I would say probably some muscle mass was lost but nothing severe and I honestly wouldn’t worry about it. Your body responds rapidly to any changes outside the norm so after a few days of being back in the routine of things…it will all even out! 🙂

I love my career… I love being an engineer and love it when I am crazy busy that I don’t know how my day went by and have to work 12 hr days and weekend… but unfortuantely I don’t like my current job. I like the position that I am in… but my boss is not the nicest person…. very rude and condesending. But I am grateful that I have job specially right nwo that no one is hiring.

    PS. MS 150 weekend is coming up (4 wk) it will be here before you know it… I am not sure what time I would actually get into Austin on the Sunday of the ride and know that we are being bus back to Houston around 5 PM… Did you still want to figure out a meet up?

  35. you know, i am not in LOVE with my actual job, but i love my co-workers and the company i work for. if i could just get paid to show up and talk to everyone… 🙂 i’m not a big basketball fan, but i do like watching all of the inevitable upsets during march madness!

  36. I am truly blessed to have my job! I LOVE IT, and LOVE the people I work with. I’m VERy lucky! It may not be the most exciting job ever, but I would never change it, not unless someone was paying me to blog or something. lol

    I have a love/hate relationship with my job…I like it sometimes. I hate it sometimes. Today, I’m apathetic. 😀 Sometimes, apathetic is all I can hope for.
