Thursday Anyone?

Good morning my Thursday friends! Did everyone have a good Wednesday night? Did you enjoy round 2 of Keith’s kettlebell demonstrations? I did! I wanted to mention that the other guy in the video was Keith’s good friend and training partner, Zach. (He is the creator of the Get Yoked Meatloaf we are always making!)  Awesome guy and I am sure he will be showing up in more videos along the way!

This morning I clocked in a 10 mile tempo run…I averaged around 8:20/pace and I am going to be heading to Body Pump in a few hours. I am easily into my second cup of coffee right now and enjoying every bite of my oatbran bowl: 1/2 cup oatbran, 1 Tbsp. flaxseed, 1 Tbsp. honey, 1 Tbsp. almond butter and a handful of fresh blueberries…HEAVEN IN A BOWL I tell ya!) Sorry no picture…I typically don’t do breakfast pictures. Not sure why…but I figure photographing my dinner every night is good enough! Don’t hate me….haha!

Speaking of dinner…last night was a simple but a goodie. I simply baked chicken (drizzled with some olive oil and sprinkled with poultry seasoning) paired with some couscous and broccoli. Eh…not terribly exciting but sometimes I think the simplest dishes are just what the body needs! (especially on busy weeknights!)

I'll Take It!

Later this afternoon I have my FINAL meeting with the local  restaurant Fion’s to finalize the healthy living menu! Today is the fun part because today is the tasting day! WOOT! The menu is debuting on Tuesday, March 23rd! OH so excited! To read more on this, go here! As soon as the menu debuts I will post it for everyone to see!

So my good friend Hilary and I were talking about life commandments. I recently started making a list of life commandments that help me when I am having a bad day. Hilary said she recently read in a magazine an excerpt from a book called, “Adding more Ing to Your Life,” and one of its tips was to write down three things that make you smile every morning.  It can be as simple as a warm bed or a good cup o joe.  But the idea is that it helps to focus on the positives in life first thing.  It sets you up for a good day. I thought this as FABULOUS! So here are my three for this morning:

  1. The weather is gorgeous today…simply gorgeous!
  2. I really got a good night’s sleep last night and feel very rejuvenated this morning
  3. Coffee, Coffee and more coffee…that will probably always be on my list! 🙂

  5. I only typically take a picture of my dinner too. Occasionally, I’ll do another meal if there is something particularly interesting about it.

  7. My go-to recipes tend to be pre-made veggie/bean burgers that I make and keep in the freezer. I think I need to smile more this morning – thank you for the reminder! I may have laughed at Cathe Friedrich as I was doing my workout this morning…that’s not good enough. Note to self: smile a lot today!

  8. I just had some fresh blueberries, too. Can I add those to my smiley list? I’d also add that tomorrow is Friday (the best thing about Thursday in my opinion) and I saw the cutest white puff ball of a puppy on the way to work this morning.

  9. It’s no longer dark when I drive to work, I get to see my bf tomorrow, it’s pay day!

    I always find quesadillas to be quick and easy.

  12. Every morning when I read your blog, it makes me want to skip work and go run 10 miles…ugh. Jealous. I guess laps around my classroom will have to do. 🙂

    I always make a bowl of veggies for dinner when I’m feeling lazy. Roast them and put them in a bowl.

  15. I throw together “veggie scrambles” for my go to if I have no other dinner ideas. I’ve got it down to a science- less than 10 minutes!

    1. Full night of sleep (hasn’t happened in a while)
    2. Boss isn’t in the office until later (for some reason people just seem so much more relaxed!)
    3. I’ve got a good run planned for tonight!

  16. Kell, I love a good simple dinner. But I must say that your dinner isn’t simple as in box of mac and cheese, yours is healthy and beautifully delicious! I make roasted chicken and sweet potatoes with broccoli for an easy weeknight meal and love it.
    Great idea on the three things to be thankful for. I need to start a gratitude journal of sorts, just to give me some perspective!

  20. my go to recipe on a busy night is always microwaved steamed veggies with something like a quorn cutlet/burger patty, grain, and a topping like hummus :). done in less than 10 mins. umm 3 things that made me smie this morning: my daily diet dr pepper (guilty!) a nice hot shower, and waking up one min before my alarm clock

I feel like a grandma by saying that the sunshine and a goodnights sleep are my happy moments! the boyfriend is town is definitely #3 though, because deep down coffee is always #1!! hehe!   36. This morning I smiled at . . . 1) knowing that I was taking a first step to getting my GI issues resolved (I got an abdominal ultrasound at 6:40 2) Starbucks unsweetened iced tea 3) Going to the Judge’s chambers!
