This Is Why You Have A Baby!

Our good friends, John and Maria, just added baby number 3 to their perfect family! (10 days ago to be exact!) Baby Dylan is ADORABLE and Maria (if you are actually finding time to read this) you look FABULOUS!! Maria is a huge fan of my Peanut Butter and Jelly Muffins so in an effort to help the tired mama out I baked her my Gluten-Free Peanut Butter Bread! This is so good and I had a hard time keeping mine Keith’s hands off of it! 🙂 

Peanut Butter Bread

 GLUTEN FREE PEANUT BUTTER BREAD

  • 2 cups all-purpose gluten-free flour
  • 1/3 cup sugar
  • 2 tsp. baking powder
  • 1 tsp salt
  • 1 egg
  • 1 cup milk (I use unsweetened almond milk)
  • 3/4 cup peanut butter
  • banana slices for garnish, optional

In a large bowl, combine the flour, sugar, baking powder and salt. Add egg, milk and peanut butter; stir just until moistened. Pour into a greased loaf pan and garnish with banana slices (if using). 

 Bake at 350 degrees for 50-60 minutes, or until toothpick inserted comes out clean. 

Serves 16

  2. I love making chocolate chip cookies for friends (not just ordinary ones) or sometimes I’ll make hummus or vegan cookies. When we go away I love to bring things to family and friends that I like to eat (selfishly haha)

  4. That bread sounds so good! I need to find more good gluten free flours. Do you use surghum? I know Bob’s Red Mill makes a lot and if I tried one that’d be it

  5. Oh that is so sweet of you. I always try to cook for my friends when they have a baby to help them out.. last year I had 15 of them have a baby within a few days of each other… So I was a busy friend cooking like a mad woman… lol

    My to go to dish is Lasagna.. everyone loves it, it reheats really well and I can make batches all at once (specially if you are feeding multiple families 🙂 )

    My go to recipe is chocolate chip cookies. The recipe I use calls for jello pudding mix…they come out SO SOFT it’s amazing.

    I dont have a go-to dish, but thats because Im not nice enough to make food for my friends. Im not even going to lie about it.
    When I worked at the bank though, we used to have bake sales all the time. I always made my Grandma’s lemon loaf. Its pretty much the best thing ever!

    I have no idea about baking bread, but I have said for the past 3 months that I want to experiment with that during my summer break from school. I do not have a bread machine so I’m glad I see that I don’t have to have one. That looks amazing!

    My go-to is a baby-food spice cake. I use half the amount of oil and sugar by using natural applesauce. It’s extremely moist and flavorful. I also do a quick poppy seed chicken.

  28. Oh…HELLO! I heart peanut butter so that bread looks TAS-TY! Yummers.

    Go to meals, probably my balsamic and honey glazed chicken with couscous. I guess that’s if I have company over.
