All Business Thursday!

Good morning everyone! I can not believe it is already Thursday…for that matter I can not believe that February is half over! But it is what it is, right?

Last night for dinner, Keith wanted turkey burgers. Easy enough. We love Applegate Farms…that is our go-to brand of choice! But upon opening the freezer I saw we only had 2 patties left! (Keith is a 2-patty burger kind of a guy) but thankfully I still had some black bean patties frozen that I had made a few weeks ago..crisis adverted! Turkey burgers for Keith, black-bean burgers for me! Hum…sounds like a pretty darn good night! I served mine open faced on GF Udi bread with some cheddar almond cheese on the bottom! Add some broccoli…deelish!

Dinner is served!

  • 2 cups black beans, drained and rinsed
  • 1/4 cup onion, chopped
  • 1/4 cup gluten-free breadcrumbs
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1 dash black pepper
  • 1/2 teaspoon garlic powder
  • 1 dash salt

Food process all ingredients except breadcrumbs. Add breadcrumbs by hand and from 4 patties. Grill on George Foreman Grill until desired doneness. Easy enough!

So this morning I cranked out 10 treadmill miles interval style! Here is what it looked like:

Miles 1-2 @ 6.9, Miles 3-4 @ 7.0, Miles 5-6 @7.1, Miles 7-8 @ 7.2, Miles 8-10 @ 7.3. I was SWEATING all over the place! But it felt awesome! Now I am fueling up (coffee, egg white scramble, and a protein brownie) because I have day 2 of Body Pump in about an hour! Woot! I can already feel my muscles getting stronger!! 🙂

Then after Body Pump I have my weekly meeting with Fion’s to keep on settling the healthy menu! The plan is to debut with a tasting party on March 23rd! For those of you who are new to the blog I have been working with a local resturaunt to design a healthy living menu with entrees that have less than 700 calories. It has been fun and the menu is going to ROCK! Sorry that’s all I can say right now….but trust me this is awesome food!! 🙂 It has been a really fun experience to work behind the scenes with a chef at a resturaunt. It is really interesting to see how it all goes down from the  purchasing side to the cooking side. But this opportunity has been AWESOME and I can’t wait for all of you locals to go check out “Kelly’s Corner” at Fions!

Do you like it when resturaunts offer healthy menu options or is ignorance bliss?

  1. What a great opportunity for you Kelly! Congrats. Can’t wait to hear more about it 🙂 I like any type of options @ restaurants – I think it’s important to eat what you want when your out. I guess nutritional info is important especially for those who have illnessess like diabetes and stuff….?

  2. Yum. Love bean burgers. Thanks for sharing your recipe. I really prefer it if restaurants offer healthy + vegetarian menu options.

  3. That sounds great! I do enjoy having healthy options, although sometimes I’m not sure if it IS healthy and delicious, or just bland. You know what I mean? I hope that your menu will include all of the healthy FLAVORFUL foods that are in nature.

  4. Excellent black bean burgers! I just opened a can of them and was wondering how to use them up! Thanks for the recipe!
I love when restaurants try to include healthy options and I wish my state posted nutrition info. I really don’t think ignorance is bliss with health. But that being said, it all comes down to what I’m craving when I’m eating out. If I want pizza, I’m well aware of what I’m consuming, and I love it!

  5. Yum! Looks like a great blackbean burger! I like it when restaurants give full disclosure on the healthy AND unhealthy items– that way, you can at least make an informed decision and know what you’re getting yourself into!

    Have a great Thursday, Kelly!

  6. Yum, I could totally handle one of those home made black bean burgers!

  7. Ok, I used black beans in my dinner last night and had a ton left over with no idea what to do with them. Now, I know, black bean burgers here I come!

  8. That is so exciting! I love when restaurants offer healthy options, makes decoding the menu much easier 😉

  9. That’s awesome that you get to help with the menu! Very cool… and I love when restaurants give the healthy option- or at least mark them. It really helps me keep in check!

  10. I would love it if more restaurants offered healthy foods. It’s all well and good to get calorie counts, but then you’re left with the one option under 1,000 calories. I’d rather have healthy foods to start. So awesome you’re taking charge with that!

  11. p.s…if these are the same Black Bean Burgers in your cookbook….I’M A-MAKING THEM!!!! 🙂 also doing the choco-chip cookies later today 🙂

  12. Your collaboration with Fion’s is so neat! I’d love to see the final menu.

  13. I am so glad I found your blog again. Burgers look excellent! I need some more of your cooking inspirations to get me out of my Plateau! Keith, your input is awesome!!! as always….Looking forward to Fion’s menu : )

  14. I’m totally going to try the black bean burgers!!

Healthy options in restaurants is a great idea!

  15. Great burger!

We don’t eat out very often and if we do it is not at a chain. I hate chain restaurants. We usually go to a local, healthy place.

  16. hey gorgeous girlie!! umm I think we share the same brain-waves..I made black bean burgers yesterday too!! yum yum!…I rarely eat out, usually to celebrate a b-day or a monthly dinner out with my parents or when the boyfriend is in town so I don’t mind not knowing the nutritional stats (even though I can usually guess what they are!) because I have celiac i have to know the ingredients…so I’m more concerned about those than the calories. I hope you are having a great thursday sista!!! 🙂 XOXO!

  17. I thought of you when I was panting after my 1 minute @ 8.0 this morning 😉

I like when they have healthy options. I have a handful of restaurants I will eat at.

  18. I love a healthy option, but sometimes it’s fun to eat something unhealthy.

  19. i love healthier options. when im not sure if its healthy i try to sub different stuff and make it healthier, at least in my opinion.

that’s so cool that you’re doing that! is it a national chain? ive never heard of Fions.

  20. I took one look at that picture and now my stomach is growwwwwling! 😦 lol. it looks so good!
    Awesome intervals!
I’m still so amazed about your whole menu thing. That’s so cool! I can’t even use change up an actual recipe without freaking out! haha. I wish I could make up my own recipes from scratch!

  21. WOW so exciting about your menu! i bet its going to be off the chain!! beastly workout girl!

  22. We often have “his” and “hers” meals at out house. I am SO happy that you posted this recipe, too – I have been looking for a good black bean burger to try out – I’ve never made my own!

Also, I realllllly wish was a local so I could try out Kelly’s Corner!!

  23. I really do like it when restraunts offer healthy food options. It is especially nice for people who are on the road all the time. It’s nice to know you don’t have to eat junk or pack a bunch of bars with you when you travel!

  24. That is SO cool Kelly!! I LOVE when restaurants have healthy options. I dont like not being able to control exactly whats going into my food, so when theres a healthier option I always go for it.

Thanks for posting this recipe, I keep seeing black bean burgers and never know how to make them.

  25. I appreciate when restaurants offer healthy options or at least post their nutrional values on their websites. I hate when places try to hide the fact that they entrees are unhealthy.

  26. My boyfriend has agreed to help me spend a week as a vegetarian. These black bean burgers would be a great menu idea. I’m saving the recipe!

  27. Your black bean burgers look super fantastic!! 🙂

  28. I didn’t know your were doing that, how awesome! Will you post a link to the menu for us non-locals if/when it is up?

  29. Oh great black bean burger recipe!! I just recently found some GF bread crumbs at Whole Foods, so I might try and make these sometime soon for Andrew and me.

I love healthy options on menus!! It takes the stress away from ordering blindly. I still can’t get over how cool “Kelly’s Corner” is!! 🙂

  30. I definitely like when they provide healthy menus. I have to eat at a lot of chains for work and with my non-foodie family/friends so it’s nice to have the options. That’s awesome that you’re helping to create one!

  31. I like to know, know, know. This is the “fact finder” in me. 😉 Thank you for that recipe!

  32. fabulous treddy workout! rock it girl! so what is your next race up?

  33. I definitely check out nutritional stats. I even “clean up” the healthy options sometimes, always sauce on the side, no butter, etc.

Dang girl, your run is awesome!! So fast!! One day…one day…

Thanks for the black bean burger recipe. I have been looking for one for a while that actually STAYS together to form a patty so I will DEFINITELY have to try yours.

  35. That burger looks good. Whenever I make my own, they fall apart.

I am totally for restaurants having healthy options or at least listing the nutritional information. If you want something indulgent, go for it, but it’s just nice to know what exactly you are putting in your mouth. (You meaning me!)
