Haha! Happy Friday! So I am sure most of you read yesterday about my beer dilemma! In case you missed it, Keith wanted me to buy him a 6 pack of Bud Light for the Superbowl even though neither of us drink. Turns out even the Superbowl doesn’t turn us into drinkers. He managed to down ONE! So I had 5 left! In an effort to not make my neighbors happy by donating them…haha…I used 2 bottles in the following recipe for dinner last night:
BEER CHICKEN
- 24 oz beer (2 bottles) of your choice
- 1/2 tsp cinnamon
- 1/2 tsp paprika
- 1/2 tsp curry powder
- 4-5 cloves garlic, minced
- 1 large onion, julienned
- small bag of baby carrots
- 4 Tbsp. olive oil
- 4-6 boneless skinless chicken thighs or breasts
Place onion, carrot, garlic, spices and olive oil in a tupperwareย container. Shake well and marinade overnight.
In the morning, dump the marinated veggies into bottom of the crockpot. Place chicken on top of veggies. Pour beer over the chicken until covered.
Cook on LOW for 8 hours.
Serves: 6

I served this with brown rice and steamed broccoli! It was AWESOME and Keith is taking full credit since it was his beer! haha!! ๐
Workout was flipping awesome this morning! 11 glorious miles averaging 8:25/pace. It felt awesome and as cheesy as it sounds I truly enjoyed every single step!! ๐ What a great way to start my Friday! ๐

We always have a ton of beer left over. I usually just stick it in the fridge until my husband randomly feels like a bottle. But I think he’d totally be behind making this. Sounds great!

Oh my that chicken looks good, totally something my husband would eat. Do you think you could leave out the curry powder? Or substitute something else? He’s not a big fan of that flavor.
Way to go for not drinking the other 5 beers, too. I was never a beer drinker until after I had a baby. For some reason, now I have cravings for it every once in a while. So strange.
You could probably leave out the curry flavor….I didn’t even tell my husband that curry powder was in it and he didn’t even know! (He isn’t a big curry lover either)

And thanks for the recipe. We always have random beer that hangs around forever too. We don’t drink much, but will buy it if we’re having people over. I’ve started sending it home with the friends, but this is a great alternative.

I’m super excited about Friday (even though I have to work at an event tonight) and I get Monday off!
Also, I fogot to give you a beer recipe yesterday-this is also chicken and also in the crockpot. I made it for Valentines day one year–it’s my husbands favorite meal.
In the crock place chicken
on top of chicken add cut up onion (i usualy use 1/2 an onion)
in a separate bowl mix 1 cup beer and 1 cup bbq sauce-pour combined sauce over onions and chicken.
Cook on low or high until finished.
Brilliant! I always forget that you can make stuff like this in the crockpot. I mostly just use mine for soups.
