Chili Me Some Lovin!

Happy Tuesday! Okay I know I am going to get some groans out there from people but I am a wimp and it is COLD in Texas right now! I think yesterday’s high was only 41! (insert all the groans from you bloggers on the east coast…I know! I know!) But 41 is cold to this southern gal! So what do you do when it is cold…make chili!! Keith was thrilled to come in the door yesterday and discover chili going nicely in the crockpot! (my favorite kitchen gadget of late). Here is my all-time favorite go-to chili recipe! You can also sub in whatever meat of your choosing…I have made this before with ground turkey and bison with no problems! But this time I stuck to the traditional and used lean ground beef! Here’s the recipe (oh and for all you cookbook owners out there…it is on page 33)

CLASSIC BEEF CHILI

1 lb lean ground beef (I used 96/4)

2 cloves garlic, finely chopped

2 Tbsp chili powder

1 tsp. cumin (I actually REALLY like cumin and I always double this)

1 (28oz) can crushed tomatoes

1 (15oz) can red kidney beans, drained and rinsed

1 sweet onion, chopped

1 (4oz) can diced green chilis

2 Tbsp. tomato paste

In a large nonstick skillet, cook beef and garlic over medium heat, until browned. Drain. Add chili powder and cumin; stir.

Combine tomatoes, beans, onions, chilies and tomato paste in slow cooker; stir in beef mixture. Cover and cook on high until flavors are blended, 4 to 5 hours.

Garnish with fresh cilantro, cheese, avacado, etc.

Yields: 6 (1 cup) servings

217.4 Calories; 5.3g Fat (2.1g saturated fat); 43.3mg Cholesterol; 486.4mg Sodium; 22.5g Carbohydrates; 7.5g Fiber; 22.1g Protein

What is your favorite cold weather meal?

Also yesterday I talked to a friend that I haven’t talked to you in a LONG time. It was my friend, Allena. She was the maid of honor in my wedding. I absolutely love her like a sister and even though we don’t talk nearly as much as we should I know that she would do ANYTHING for me if I ever needed her. She is one of those friends that has seen me through it all and I know that when push comes to shove she always has my back! Love you Allena!!

This morning has been awesome. No complaints. I ran 10 miles at 8:27 pace and then took an hour break to refuel with some food and coffee and then headed back in for an hour session of weight lifting with Keith. I will admit that having my husband train me is difficult. I tend to be very oversensitive when he critiques me. I have my fitness certification too so when he corrects my form I always feel like a loser! But I have to remember that I can not let that “perfection bug” win and Keith is just looking out for my safety!!

    And yes, my hubby and I don’t work out together. We do different things and prefer to keep the time to ourselves. We may work out AT the same time, but not together. 🙂

    My hubby and I go to BodyPump together. We ran one half marathon together, but it was a little strange (mainly because I kept wiping my face on his shirt sleeve — I’m gross).

    I love split pea soup in an acorn squash “bowl” in the cold.

  6. Nice run this a.m.! My boyfriend is a chiropractor which is great sometimes but annoying other times. He’ll work on me if I injure myself but he’s so busy I hate asking him! Plus, I know I push myself too much (how else will I improve?) but then he has to “fix” me. 🙂 If I didn’t train so much, I wouldn’t have to bother him. We’re working it out, though…and we have a pretty good understanding of each other. 🙂

  7. I love chili in cold weather too. I make a tomato version, but also a ground turkey/black bean that is almost identical to yours here but without the tomatoes/kidney beans. I add chicken broth and a couple of spoonfuls of corn meal. My husband and I will hike and kayak together. Your wedding photo is great!

  8. Chili is the best when it’s cold…any soup or stew really. We don’t work out together, but I do know what it’s like to be oversensitive to critiques from the hubby. I tend to get over-defensive if I think he is trying to correct me on anything. Gotta get over it!

    I used to workout with my boyfriend.. he actually helped me get started! He’s naturally really buff (so jealous) and he used to help me bench press. But now we’re doing the long distance thing so I workout on my own!

  11. My favorite cold weather food is oats!! I can’t have anything else in the morning (unless I’m feeling crazy, or am out of oats, which is rare)

    I have a hard time working out with my significant other because, in all honestly, I am in much better shape than he is.

  13. I have a tough time working out with The Huz, because we enjoy very different gym activities. I love pilates and running while he loves lifting huge weights. I don’t mind checkin’ him out as I run on the treadmill and he pumps iron though 😉

  14. We’re the opposite: I’m usually the one pushing my husband.

    I think there’s nothing more perfect than grilled cheese and tomato soup when it’s cold and snowy out (like it is today). Well, OK, warm weather would be nicer. Sigh.

  17. Nothing better than chili on a chilly day. Also, as I tell everyone I’ve ever met (because I’m ALWAYS cold)…it’s all relative. I can feel really cold when it’s 41* here, too!

    My husband used to be a personal trainer, so I loved working out with him…he pushed me so hard I cried sometimes! hah.

  18. Yes it is harder to workout with my husband… I love him to death.. but he wants me to keep up with him when running, rowing, cycling.. lifting weights.. lol… He is 6’3″ and I am 5’2″ picture that on two scales in the river.. who do you think is going to go faster… lol

  21. I always do chili with lean ground beef. We hardly ever have it though… When I’ve made it with turkey burger it’s been too dry.

    My husband is a marine so we definitely don’t get along if we workout together. I usually end up with my feelings hurt.

    • I use the ground dark turkey and for us, it’s not too dry. I also have heard that if you boil the light ground turkey in the chili or other liquid, rather than brown it, it’s more tender. I do this when I make meatballs.

  27. I’m more fit than my bf, so when we run together, it’s really cute bc he tries so hard to keep up! He’s really driven with his career, so it’s kinda sweet seeing him a bit out of his element and a little vulnerable. We don’t do more than a couple miles together, so I usually have to do a spinning class or something else to get my REAL workout in 🙂

  28. I cant do anything besides run with the bf–that was a feat in and of itself. I always dreamed of working out with my partner but never felt good enough about myself to do that. We trained for a marathon together and that basically told me that we can do anything.Still, I don’t think I’d do yoga or anything with him just yet. Maybe if I got better at it.
