Fabulous Friday!

Friday! Woo hoo! Is anyone else excited?! Let’s recap with last night…dinner was really good. We had meatloaf. One of our friends, and fellow fitness trainers, Zach, gave us a recipe a few months back called Get Yoked Meatloaf (get the recipe here) and it is SO good!! Served up with some mashed potatoes and steamed broccoli…um…yeah…delicious!!

 I also need to give a shout out to the mashed potatoes I use. I am admitting to cheating…these are instant! But REALLY good! haha! I find them at The Natural Grocer (which is mine and Keith’s favorite store). They are made by a company called Hearthland Foods and they are all natural and gluten-free! SWEET! They are perfect for mashed potatoes in a pinch. You just boil 2 cups of water and mix in the packet off the heat and ta-da they’re done! The nutritionals are pretty darn good too: 1/2 cup serving = 100 Calories; 2g Fat; 19g Carbohydrates; 1g Fiber; 2g Protein. Not too shabby, eh?! Plus check out the ingredient list: Potatoes, Powdered Dry Milk, Whey, Butter, Salt. Hum…notice something…you can pronounce EVERYTHING!!

Also this afternoon, Keith and I are heading to Sprouts! They just recently came to Austin and we haven’t really had a chance to properly case the joint! We’ve been in a few times for quickie things but nothing too extensive. So we are heading there this afternoon for a fieldtrip! The foodie in me is very excited! Now if only Austin could get a Trader Joes…

  4. Trader Joe’s is the best. I go there with my friend Katie in DC when I visit, but Sprouts is Awesome, too. They seem to be less expensive than Whole Foods and have more of a selection of certain items and their store-brand stuff is great. I still have to go to the bog downtown Whole Foods for a few choice things, but for the most part I’ve made the switch to Sprouts. Another pro, I can get Alternative bagels and all my organics and also my husband’s “normal” Mrs Baird’s bread in the same place 🙂

  5. I have a strange aversion to meatloaf. But my husband is all about mashed potatoes from a box. I’m really going to search those out because they’re about 200 times healthier than the brand he uses.

    Im so excited its friday. I plan to spend my weekend doing absolutely nothing.

  16. Despite not eating meat all that often, I actually really like meatloaf! Especially my mom’s 🙂 She makes a great sauce out of ketchup, mustard, worcestire sauce, and brown sugar.

    January is the perfect time for comfort food!

    • Also on my recipe page I have a recipe for pineapple meatloaf! It is awesome too! The sweet/savory flavor combination is out of this world!!
