Brrr, It’s Cold in Here…

Can anyone finish that movie line?? Don’t laugh but it is from Bring It On with Kirsten Dunst. She is a cheerleader and that is the cheer, “Brrr, it’s cold in here! Must be the Torros in the atmosphere!” Haha…okay seriously I know I am a big DORK! But really with the entire country in the midst of this arctic blast I thought I would post one of my favorite cold weather recipes! Enjoy, STAY WARM and happy Friday night!

BEANS WITH BEEF JERKY

Cold Weather Goodness!
  • 2  teaspoons  olive oil
  • 3  cups  chopped onion (about 1 large)
  • 1  cup  chopped green bell pepper (about 1 medium)
  • 5  garlic cloves, minced
  • 1 1/2  cups  fat-free, less-sodium chicken broth
  • 1/2  cup  (2 ounces) pepper beef jerky, minced
  • 2  tablespoons  molasses
  • 2  teaspoons  ground cumin
  • 3  (15-ounce) cans pinto beans, rinsed and drained

Heat oil in Dutch oven over medium heat. Add onion, bell pepper, and garlic to pan; cook 5 minutes, stirring occasionally. Add broth and remaining ingredients; bring to a boil. Cover, reduce heat, and simmer 1 hour, stirring occasionally. Uncover and cook until liquid is reduced by about half (about 15 minutes).

Serves: 10 (1/2 cup servings)

156 Calories; 2.2g Fat, 6mg Cholesterol; 487mg Sodium, 25.5g Carbohydrates, 6.2g Fiber, 8.9g Protein

  3. That sounds so good! There’s this meat market near my grandparents and they always buy us spicy beef jerky.. it’s so good!

    Nothing better than chili-type food on a cold night. I love the idea of putting beef jerky with the beans. Genius!
