Our good friends, John and Maria, just added baby number 3 to their perfect family! (10 days ago to be exact!) Baby Dylan is ADORABLE and Maria (if you are actually finding time to read this) you look FABULOUS!! Maria is a huge fan of my Peanut Butter and Jelly Muffins so in an effort to help the tired mama out I baked her my Gluten-Free Peanut Butter Bread! This is so good and I had a hard time keeping mine Keith’s hands off of it! :)
GLUTEN FREE PEANUT BUTTER BREAD
- 2 cups all-purpose gluten-free flour
- 1/3 cup sugar
- 2 tsp. baking powder
- 1 tsp salt
- 1 egg
- 1 cup milk (I use unsweetened almond milk)
- 3/4 cup peanut butter
- banana slices for garnish, optional
In a large bowl, combine the flour, sugar, baking powder and salt. Add egg, milk and peanut butter; stir just until moistened. Pour into a greased loaf pan and garnish with banana slices (if using).
Bake at 350 degrees for 50-60 minutes, or until toothpick inserted comes out clean.
